Pizzeria Nennella is located at Via Gradoni di Chiaia, 3, in Naples. Its owner and pizzaiolo is Pasquale Vitiello, 42, a member of the Vitiello family of restaurateurs associated with the historic Nennella trattoria.
The signature pizza is the Scarpariello. It derives from a sauce associated with Vitiello's grandfather Pasquale. It is prepared with fresh cherry tomatoes sauteed in a pan, pieces of provola, Parmesan and basil.
The dough is made by direct mixing with nine hours of leavening. Alongside the Scarpariello, the pizzeria serves traditional pizzas, fried pizzas, "pizze Napoli," fried starters, pasta-and-potatoes-inspired dishes and other family recipes.
